Subject: Kalamata Olives

I planted a Kalamata tree a few years ago, it had many olives on for a small tree, yet it is now end of May and most of them did not ripen.
My Spanish olives went black a long time age and all in bottles. The Spanish olives I like to just turn color. I thought the Kalamatas have to be black. At least the one on the market are all black. So I try to prepare them greenish.
Any thoughts?

What is your location?

This year wasn’t universally a good year for olives in Australia. Kalamata do make great black olives but they can also be processed as green olives or as schiacatte.
