The Malquetinha chillis are my own home-grown chillis. Omit them, and after making your first batch, work out whether you need to add more chilli.

When I have dried anchovies, I add them. I used to cut the up with scissors. The current batch, I ground up using a mortar and pestle.

I use Daikon, celery or carrot as an extra vegetable. Short julienned straws. I omit if I don’t have any.

Ta. Is there any particular reason to use plastic rather than glass?

Not really. I just had them. And they work.
