Belarus has the highest per capita potato consumption in the world, with residents consuming around 170 kg (roughly 375 lbs) per person annually.

This high consumption reflects the central role of potatoes in Belarusian traditional cuisine and daily diet, often surpassing 100 kg to over 150 kg per person in recent studies.

Top Potato Consuming Countries per Capita

Belarus: ~170 kg per year
Ukraine: ~126 kg per year
Kazakhstan: ~105–107 kg per year
Kyrgyzstan: ~108 kg per year
Poland: Just under 100 kg per year

I wonder what they did before the introduction of the potato. They are an introduced crop from South America IIRC.

In terms of root vegetables, they would have eaten more turnips, swedes, parsnips, carrots etc.

They would also have eaten more bread, although the people of those regions still eat shedloads of bread.
