Subject: Interesting salads for a crowd.
I need some inspiration for Joels party this weekend. The finger food side of things is under control but I’m stuck on the main course.
We’re having a barby with steak, snags and honey soy chicken. I’m going to boil up a pot of chats with some mint butter but I need some ideas that are a bit different to the old coleslaw and tossed salad to go with it.

There always seems to be salad left over at BBQs, so don’t go to too much trouble.
Greek Salad
Garden Salad (blanched then chilled garden veg like beans, broccoli, cauliflower etc.) with dressing
Vege sticks with dip

Favourite here is thai beef salad.
We’ve had a nice thai fried egg salad too.
Mr Bon does a bunch of nice warm salads with things like baby spinach, chicken, pumpkin, feta..

A couple cooked chooks meat chopped, fill lettuce cups with mayo, chopped celery , peas or grated carrot , chopped cucumber , chopped boiled eggs or whatever other vegie you have, mix and fill the lettuce cups, one per prson .. they are more temped to eat their vegies this way and there’s less waste. Prepare them in texas muffin tins to keep their shape and store in the fridge.
Tuna, onion and tomato, instead of chicken, or ham and creamed corn. Smoked cod and lite cheese sauce with peas. Turkey slice, cranberry and apple. Bean salad. Ect.
They look nice, kids love them, and I was happy my teenage lot would have something healthy amongst their party foods.

I’ve found a watermelon and feta salad that looks good and I’ll do the obligatory tossed green salad. Something interesting with Toms would be good. I found one That’s a BLT salad that might be the go. It’s cherry toms, lettuce, crispy bacon and cubed french stick. Sort of a variation on Fattoush.

I got a million of them. Curried rice salad, barley salad, egg salad, Chang’s chinese cabbage salad, waldorf, carrot and coconut, Hawaiian salad, pasta and kabana,vegie julienne, Greek salad, bean and celery salad. I used to make lots of different salads when I was a cook. I also found that a large platter with sliced tomato, sliced cucumber, maybe sliced pineapple all layed out in an over lapping pattern with something like alfalfa in the centre always went down well and looked attractive on the table. Then you can also branch out into stuffed tomatoes or lettuce cups, type of thing.

Sauted fresh grated beetroot with orange rind and juice and served with sour cream.

Why not make some falafels as meat substitute for the burgers? Or BBQ some huge field mushies as meat substitute?
Or stuff capsicum with something spicy? Or use the capsicum as egg rings on the BBQ, put some cheese/herbs in the egg before it cooks? Yum.

A bit of everything. Samosas were part of the pre dinner snacks, and went down well. Steak, snags chicken and too many salads. LOL
I wildly over catered so doggie bags were sent home with everyone.

it was a great topic – obviously people are treating salads as a meal – collie’s herbed egg inside capsicum rings sounded smart for a bbq IMO.
