Subject: Preserving beetroot

I have some good size beetroot and would like to know a tried and true recipe for bottling beetroot. I know (or think) its sugar, vinegar, water & of course beetroot. But not sure how much per jar.

This is the one I use – adjusted to the amount of beetroot you have, of course.

Beetroot pickling

24 beetroot
2 cups sugar
2 sticks cinnamon (quills)
1 tablespoon whole allspice
1 1/2 tsps salt
3 1/2 cups vinegar
1 1/2 cups water

Wash the beetroot, then pop it into a large stock pot/pot cover with water and bring to a boil. Turn the boil down to a good simmer and cook for 45 to 60 mins. (depends on the size of the beetroot)
When tender drain and leave to cool until you are able to handle it with out burning your hands.

DO NOT cut the tops or bottoms off the beetroot before cooking as it will bleed and you will loose the colour.

While the beetroot is cooking, combine all the other ingredients in a separate saucepan and bring to a boil. Reduce heat to simmer for 15 mins. Remove cinnamon sticks (quills).

When beetroot is cooler, top and tail each one and skins should slip off easily. Slice beetroot into 1/4” slices if desired, if baby beetroot you can leave them whole if desired.

Pack slices into your prepared jars (read washed, sterile and heated jars as normal) and pour vinegar liquid into jars to cover beetroot leaving about a 1/4” headspace. Remove all airbubbles and seal.

As its going to be a stinker tomorrow, I am all set to make a few jars of beetroot. Very egg-cited about this as I am hoping we will enjoy it enough to be able to make our own.,:)

Here is what I do:

Boil until tender (making sure that you don’t remove the root until after cooking, otherwise the beet will “bleed”) and this is the recipe I use for the pickling solution:

BEETROOT VINEGAR

Ingredients 2 cups white vinegar
1 cup sugar
1 cup water
1/4 cinnamon stick
1 bay leaf
4 cloves
4 peppercorns

Method
Place in saucepan and heat until combined. Cool and pour over cooked, sliced beetroot.
Mr AnneS reckons it’s the beetroot pickling recipe he’s ever tasted

Thanks Bon. I am going to pop them in the pantry. I am guessing they’ll last longer and not “go off” (so to speak) as quick.

Kitchen is now tidy again.

Popping my feet up for 10 mins and then off with my list of jobs again.
