I took a batch of hot Easter buns down to the green grocer this morning, to say thanks for all the fresh greens for the gang.

Also gave a couple to the shop that gives me bread rolls for the gang.

Felt FAB TAB giving them the buns at the grocer shop….. I get heaps of free greens from them.

Took them down in a cane basket wrapped in a fresh large tea-towel…. no plastic involved.

I start with shop bought chocolate eggs. Just one of those 1dozen in a pack like chook eggs..Peel back some of the foil paper an take out a little bit of chocolate (just as if it’s a hard boiled egg and a lid has been taken off the top) Then it’s just a mixture of cream, melted white chocolate, beaten egg and some things I can’t recall ATM and you pour this mix back into the hollow egg. Set in the fridge.

Our grandson is just a little tyke so don’t think he would be able to handle more than one.

making your own chocolate isn’t hard either..once you have the moulds. I remember my mum making it as Easter got too exxy with us lot’s of kid’s. She used to make tray’s of it and I would paint mould’s or add nut’s or dried fruit to block’s of it. We had great fun decorating pretty eggs.

I remember it was made with icing sugar , cocoa , copha and milk powder… I cant remember the amount of cocoa, but the other item’s were equal amount’s.

OK ms spock, here it is.

I am using marshmallow instead of Crunchie in mine because of small Grandson.

Choc-honeycomb Mousse Eggs.

12×6cm hollow milk chocolate E eggs
2 eggs, separated
20g butter, chopped
3/4 cup white chocmelts, melted
2/3 cup thickened cream, whipped
50g Crunchie Bar, coarsely chopped
Extra finely chopped Crunchie to decorate.

Carefully peel back foil wrapper on egg to half way. Gently take off about 2cm of chocolate from the top of the egg. Place eggs in an empty egg carton to stand upright.

Combine egg yolks and butter in a heat proof bowl. Place bowl over a pan of simmering water and stir until butter is melted. Remove from heat and stir in melted chocolate. Let cool to room temperature.

Beat egg whites in a small bowl with an electric mixer until soft peaks form. Fold egg whites into chocolate mixture with cream and crunchie pieces. Pour mixture into chocolate eggs. Cover and refrigerate for several hours or o/n.

Stand eggs at room temperature for 15 minutes before serving. Decorate with extra chopped Crunchie.

Mousse-filled eggs can be made up to one day ahead and stored, covered, in the refrigerator.
