Are there any particle emission charts around that list different particles and their emission speeds from stars?

Yes and no. What you can find is cosmic ray spectra.

Cosmic rays are particles emitted by stars and other energetic objects such as supernovas and pulsars.

The following gives galactic (ie. from stars) emission flux and energy. So using the known mass of for example the proton you can get the emission speed.

There would also be cosmic ray energy charts for other particles such as deuterons and helium nuclei.

There are also charts for emission energies of some particles coming from our Sun.

The following is the solar neutrino energy spectrum, which is a sum of energies from different processes, for example pp is the process of neutrinos coming from two hydrogen atoms combining to form one deuterium nucleus. The neutrino speed is very close to the speed of light.

The following is the solar photon energy spectrum. The dotted line at the top.
