Subject: Pickled Onions

My dad wants to pickle onions himself.

Does anyone know what sort of vinegar is used.??

Or do you have a tried and true recipe you want to share????

hey Lucky, soak them in salty water for 24hrs, then the next day you cook up a syrup of (white) vinegar, cloves, cinnamin,ginger, peppercorns, and i cant remember the rest, then cool it a bit and pour into jars with the drained onions :) I cant remember the exact ingredients but i think this is pretty right, somebody else might have other recipes for you too …

My chef friend said the ABC one, tassie, is the one her hubby makes, with the exception of malt vinegar instead of white vinegar or cider vinegar.
I don’t make them nor eat them, don’t like them.

I pickle my chillies using the below recipe, but i add shallots, perennial leeks, small onions, small capsicum,(red and green) ancho chillies,(red and green) habanero chiillies (red and green) and anything else i reckon is a fair thing.
I also chuck in some mustard seed. Been known to add some apple cider vinegar too as a top up.
It’s a great flavour and would work fine for onions or pretty much anything else.

Cooking time: Less than 30 minutes
Course: Side dish

Makes: 1 large jar
INGREDIENTS

500g long chillies
250ml water
250ml white vinegar
1 teaspoon sugar
1 tablespoon salt
1 teaspoon coriander seeds
1 teaspoon peppercorns
1-2 bay leaves
METHOD

Wash whole chillies and pierce them 4 or 5 times with a pin.

Heat water, vinegar, sugar, salt, coriander seeds, peppercorns and bay leaves until sugar and salt dissolve. The vinegar should not be allowed to boil.

Pack chillies tightly in jars, pour hot vinegar mixture over chillies; seal. After a week check liquid levels in the jar. You may need to top up with some more vinegar mixture. This will ensure no air gets to the chillies, thus causing them to oxidise and turn bad.
