Subject: Cocoa.

I got me a cocoa pod, and have collected the seed. First step in chocolate creation is to ferment the beans. I reckon’ by placing them in a sealed clean jar, will this be enough for fermentation, or do I need to add something like sugar?

beans have fermented. Now we try drying them.

some of the beans shooted and rooted so they are into soil.

Actual cocoa powder or carob? Have you ever tried to make your own chocolate ? it’s actually quite easy. My mum used to make it, I don’t remb the amount of cocoa powder but the rest were in equal amounts, copha, icing sugar and full cream milk powder. Mum would add nuts and/or fruit, coconut ect.
Getting the temperature right was the challenge as there’s not a lot of leeway in the temp of the mix.

what don’t you read the whole thread Potter? Carob I believe is for the pepes of the world, up here we use Cacao Pods!

carob is a challenge. i believe i will need a grinding machine to reduce the roasted carob beans to powder.

are they dry enough pepe? Perhaps dry them in the sun for a few days before roasting, and then try grinding???

this is adelaide so dry is not a problem.
they are hard beyond belief when dried and ordinary kitchen wizzes will not powder them – have tried.
