There is a margin of error. The graphics only show the average path, not the full range of all paths. What you’ll find is that if the graphics showed a larger circle with all the possible paths, to ball could be clipping the stumps or it could be just missing. They only show ‘hitting” if there is no possible path where the ball misses, and “missing” only if there is no possible path where it hits. Anything in between is Umpire’s Call.
Head seems to be the answer to our middle order.

It’s an engineering thing. The accuracy of the ball-tracking system is +/- half a ball width.
So, if less than half a ball (via electronic ball-tracking) is shown clipping the stumps, it is “Umpire’s decision”. This is written into the laws.
