Howdee folks….I’m sure this has come up before, but I’ll ask anyways.

Got 2 rather large, and 3 small pumpkins.

Has anyone got ideas so none go to waste. I’m gonna be makin the obvious…soup… and freeze it.

And Jackie F says mashed pumpkin freezes ok. Has anyone tried drying it?

And if I store them in my pantry, are there any tips I need to know so they last for ages?
And how do you know when they’re getting old?

Hey Veg…yep roast pumpkin, but can I freeze it? I keep getting conflicting answers….tried google and its the same…some say yes, others say no.
Large pumpkins, are you taking weight or measured size? Either way got too many for just the two of us.
Have had to rip alot of my vegies out due to lack of water…so what ever I can salvage for later use, the better.

At work now, just finishing lunch, so will have to drop back in later

Cut into pieces, nuke for one minute in the microwave and then place on an open tray, dry freeze then as soon as it’s solid pack into a bag and squeeze air out and it will keep in the freezer for months :D
I froze pumpkin this way and 8 months later browned about 400 g and used for pumpkin risotto. Beautiful!

What kind of pumpkins are they Mushee? Some keep better than others. I have a crop of Butternuts almost ready to pick. They should keep better than Jap pumps. but neither of them will keep as well as a Queensland Blue.

I find it’s a good idea to make up recipes that use pumpkin and freeze them rather than try to freeze pumpkin flesh on it’s own.

I roast cubes and then freeze them. Roasted pumpkin makes the best soup. It really brings out the sweetness.

Cut one pumpkin today:-

And that’s from memory … when I had a glut of monster pumpkins to deal with :)

I’d cut a pumpkin and go into overdrive until I’d used it up, then have a week or two to get over pumpkinitis before I’d cut the next one.

Homemade bread (breadmaker or the time-honoured way) and pumpkin soup is stuff memories are made of.

You definately can. I think it really depends what you intend using it for. Soup or risotto etc is fine but it wouldn’t work very well if you just wanted to serve it as part of a roast dinner.

Cut one pumpkin today:-

  • pumpkin soup fresh tonight (Mon), enough in the fridge to reheat for the day after (Wed) (I get sick of it two days in a row);
  • dice the rest of the pumpkin and seal in plastic bag in fridge with all the air sucked out so you can just grab a bit when you need it – will be okay till the weekend;
  • roast pumpkin with a roast chook tomorrow night (Tues) (don’t bother with potatoes, just lots n lots of punkin);
  • roast pumpkin risotto (Thurs);
  • Friday night steam and mash a heap so that it has cooled off for baking blitz on the weekend – triple batch pumpkin scones fresh for afternoon tea Saturday, rest in the freezer; triple batch pumpkin-choc-orange cake fresh for afternoon tea Sunday, rest in freezer; cut and pack individual slices of cake or individual scones;
  • mashed (with very little extra water) freezes okay, but defrosts a bit watery from memory.

And that’s from memory … when I had a glut of monster pumpkins to deal with :)

We had our first pot of soup for the season last week. Ian Parmenter’s Minestrone. YUMMY

I’ve got my 70c a kg blue pumpkin from a local market waiting for me to make it into various wonderful things. Littlefella goes back to his dad’s place in two days’ time so it will have to wait till the school holidays when I have a week off. On my list of things to do while I’m on leave is “gourmet food every day” ;)

The cupboard is bare here so I’ve just put on a pot of soup. I’m making it up as I go, but ATM it’s potato, pumpkin and onion, stock made from powder and a generous sprinkle of morrocan spice. I think I’ll blitz it and finish off with some light evap milk and maybe some crisp bacon if i can be bothered.

————————-

trichome came up with some relevant oldies there.

as it said – leave the pumpkin until the stem has turned brown and shrivelled – then cut about a 70mm stub and put the pumpkin in the sun for three or four days to harden the skin.

if it’s a butternut or queensland blue it will last there for the whole of winter.
you will know when it starts to rot – it will soften and smell.

Don’t grow pumpkins these days. Living and working in an area that produces mega millions of pumpkins, i see no rason to waste space in my garden on them.
a 30 tonne truckload leaves the farm I am currently working on at least four times a day. Can fill the back of my ute with pumpkins and watermelons every day free of charge, if I really want.

Freeze as much pumpkin soup as my freezers will allow. Considering that they are probably full of tomato sauce. Any extra pumpkins are stored where they have airy storage.

Would you believe I didn’t plant these pumpkins. They were ferals that musta been in my compost or bokashi bucket. I’ve discovered some things in the bokashi bucket will still sprout once out in the garden.
So I just let em do their own thing. Wasn’t long before the powdery mildew turned up and the dog ate lots of the leaves.
But all in all happy with my first ever half hearted attempt.
