Subject: Ice Cream Recipes

I am trying to find a good standard Ice Cream recipe for my machine. One that I can adapt to any flavour i choose to make BUT I don’t want any eggs in the mix.

I have done a bit of searching and lots of recipes have lots of eggs in them and I was wondering why that is. I have made vanilla I C without any eggs and it was quite ok to eat but am I missing something? Does I C really needs eggs in it?

Yes I’ve been over quite a number abd the same applies. Some have eggs and some don’t. I would like to know what is the difference.

Well, I went and looked at Wikipedia anyway, and here it calls icecream with added egg, Frozen Custard…Historically eggs don’t appear to be part of the icecream process???

I get the impression the eggs stop it from being an ICE cream and more a ice CREAM!. I do believe GF makes a few eggless recipes, but I think she calls ‘em sorbets or gelati…

I’ve done a sorbet and I love it. D doesn’t. You could be right about the creamyness thing and eggs.

I’ve seen a couple of recipes using condensed milk. Must give it a go sometime soon. Won’t be mango tho.

here’s a vegetarian recipe from Kurma dasa. I know Bubba has this book and its well tasty.

1.5 cups heavy cream
1 cup cold milk
1 cup sweetened condensed milk
1.5 cups of mango pulp.

beat cream until semi-whipped
beat milk and sc milk until combined (in another bowl)
pour bowl 2 into bowl 1
and fold in mango pulp

you can just freeze this as is. Or put it into the ice cream machine for extra softness
