I asked over on another forum and one of their members kindly put this up. One is for rosella Jelly and the other is for Jam. Hope it’s not too late.
Rosella JELLY
The worst part of rosella jam is pulling them apart. good job for the kids. LOL
I made this Rosella Jelly once and it was quite nice.
Wash fruit, do not cut.
Almost cover with water and boil until the seeds are seen thru the pods and fruit is reduced to a pulp.
Strain thru a scalded jelly bag [ or two thicknesses of tea towel }
Do not squeeze jellies….they become cloudy.
Add one cup sugar to one cup of juice and a squeeze of lemon juice.
Boil 20 minutes, longer boiling will spoil colour.

ROSELLA JAM.
sEPARATE SEEDS FROM THE HUSKS AND WASH THREE TIMES.
pUT FRUIT IN PAN AND LEAVE OVERNIGHT.
pUT SEEDS IN A CONTAINER AND JUST COVER WITH BOILING WATER.
pUT ON A LID.
nEXT DAY SHAKE THE SEEDS WELL AND STRAIN, AND POUR THE LIQUID ON THE FRUIT.
aDD SOME LEMON JUICE.
cOOK UNTIL TENDER.
aDD ONE CUP OF SUGAR TO 1 CUP OF PULP AND BOIL TILL IT JELLIES.
nO LONGER THAN 20 MINUTES.
