Why does liquid latex set in water rather than dissolve.

I have no idea really, but I am taking this opportunity to see if my new ID has been activated. (Yes, it has!) It was a long walk in the wilderness before I stumbled across this sanctuary for SSSF refugees. Even so, it was hard to get accepted. My old ID was shunned so I had to make another.
Anyway, now that I’m here, I’ll hazard a guess and say that things that dissolve in water are crystalline and ionically bonded, enabling water molecules to come between, whereas latex has the other kind of bonding (covalent?) and just gets cool in water and starts to solidify.
I look forward to being corrected by those more knowledgeable than me in this subject.
good place to start. thanks pesce

Who let you in, ghoti?
Not ghoti. Poisson.

Try latex in EZ water. Just prepare to be dazzled!
I have a solution of approximately 60% polyester resin 30% styrene monomer. Activating agent is Methyl Ethyl Ketone Peroxide.
For interests sake, what is the process that is activated when these are mixed?

Probably radical polymerisation.
