Raw green beans are supposed to be mildly toxic. I’ve eaten a handful or so today and now seem to have a swollen liver. Can the toxins in raw beans cause this?

Shouldn’t think so. It was only after noticing the swollen upper abdomen that I remembered raw green beans are mildly toxic.

Toxins tend to accumulate in the seed, probably to deter things eating them. But have no idea what toxins are in beans that might harm people.

What did you drink with them?

Haven’t had any booze since last Thursday night.
I take it these are French bush/climbing beans, which you eat whole, not the farty seeds?
I eat raw beans all the time. Love them. It is dried beans that may be toxic if you don ‘t cook them long enough. I’ve eaten so many green beans raw that they should have knocked me about by now. My mother hated sending me to pick the beans because none would come back into the house.
However, I’ve also been known to eat raw potato which could be a little more risky.

Aye, the Blue Lakes & Purple Kings.

Lovely tucker. I’d reckon that your liver is missing the meat and the booze.
I’ve often eaten raw beans without noticing any adverse effects, but I haven’t grown these purple ones before.

The purple colouring does disappear when cooked However I doubt that the purple is toxic.

I eat a lot of purple cabbage with no noticeable ill effects.
I’m very fond of slicing raw purple cabbage and eating it with cheese.

Raw cauliflower is very pleasant too, nicely dressed & seasoned.

Cold salad-type sangers for some reason make me feel ill.
Might be OK on warm toast though.
Who eats toast cold? What’s the point…

Yep. Again my mother and wife never enjoyed me in the kitchen while they were cooking. My hands got slapped and I was told, I need that for the recipe. I always said I hate cooked veg. Which isn’t entirely true but I definitely prefer raw cauliflower to cooked cauli.

None but I’ve often done so.

Newtons laws of cooling + time seem to often lead me to almost cold toast. :(
harking back to the beans. I’d suggest that picking them too mature and eating them raw could lead to mild toxic reactions. As if the bean seeds themselves have formed then you are running that risk. Beans are usually picked before that stage unless you are going to cook the seeds and throw the pods away.

Yep. It does happen.

I was prompted to say the above after the picture of your lovely furniture loaded enough for me to see the beans.
I did eat a few oversized ones raw, with seeds in them big enough to plant :)
There’s always a few like that hiding and growing much bigger than I normally let them.

Cauli, chives, purple cabbage & bok choi with ABC & Lankashire relish microwaved foe a short time makes a crunchy, tasty meal.
I like raw asparagus and beetroot with lashings of cod liver oil.
Hey Bubblecar…….knock yourself out! You can find toxic stuff in soooo many foods!
