Subject: Raw Beans & Swollen Liver

Raw green beans are supposed to be mildly toxic. I’ve eaten a handful or so today and now seem to have a swollen liver. Can the toxins in raw beans cause this?

Shouldn’t think so. It was only after noticing the swollen upper abdomen that I remembered raw green beans are mildly toxic.

Toxins tend to accumulate in the seed, probably to deter things eating them. But have no idea what toxins are in beans that might harm people.

More likely to be wind.
Beans are famous for their fart producing properties.

I eat raw beans all the time. Love them. It is dried beans that may be toxic if you don ‘t cook them long enough. I’ve eaten so many green beans raw that they should have knocked me about by now. My mother hated sending me to pick the beans because none would come back into the house.

However, I’ve also been known to eat raw potato which could be a little more risky.

Yep. Again my mother and wife never enjoyed me in the kitchen while they were cooking. My hands got slapped and I was told, I need that for the recipe. I always said I hate cooked veg. Which isn’t entirely true but I definitely prefer raw cauliflower to cooked cauli.

harking back to the beans. I’d suggest that picking them too mature and eating them raw could lead to mild toxic reactions. As if the bean seeds themselves have formed then you are running that risk. Beans are usually picked before that stage unless you are going to cook the seeds and throw the pods away.
