Has anyone grown yacon before? If so do you have some good recipes or do you just eat it raw. We have one plant and harvested 2 or 3 tubers a few weeks ago, however I suspect that when I go out there tomorrow I will find quite a few more.

As I am not yet able to eat raw vegetables I was hoping to get some good recipes, but so far my online search has proven unsuccessful. Apparently though, you can make a syrup out of them…sounds interesting.

You can roast them or steam them, add whatever condiment you like. I love them raw and when I harvest a plant the tubers I sneak them into the shed unseen to dry off or they are all eaten within a day. You can mash or grate them raw. Add to a smoothie?

First year harvest you will get a few, but if you can wait until the 2nd year, there’s ten times the amount. A barrowful to a small bagful. I have 8 going and I will harvest 3 or so this year and leave the rest. Then I’ll stagger plant for harvesting 2nd yea ones every year.

Thanks…..mine has not died down yet….I presume I have to wait until then to dig. They are in their second year as they were pathetic looking things the first year and I didn’t bother to dig. I still have some flowers.

I have had them raw before :) I gather that as they are related to sunflowere and jerusalem artichokes that they can be treated in much the same way?

My yacon plants are still green, growing more green and flowering. Seasons are funny things in different places, aren’t they.

Mine are too, looking very lush after that rain, but the first frost will knock them over.
