Subject: Preserving manderins

OK, sorry if I’ve talked about this before, but I can’t find a thread for it…

J1, from down the back, has given me a shopping bag of mandarins that are ripening beautifully…I do not like mandarin juice. I do not like fruit juice, full stop.

Can I just preserve these in jars, kind of like canning? Am prepared to peel some and freeze the segments in freezer bags.

I also have access to her cumquats, need to inspect my jars and does anybody have a favourite receipt for cumquat marmalade?

Ideers, ideers, and I’ll print them out this time…

I have come across a marmalade receipt, in the ICPCA (?) (mostly School of the Air, parents’ association) receipt book, so I might give that a go. It’s proportionate so I don’t need specific quantities or poundages. Also have a receipt in their for cumquats, so will be down at J1’s in the morning as they need to sit in water for 12 hours after being sliced, etc.

Keeping this in the kind-of jam thread..my cherry guava jelly turned out to be toffee…Mrs B has the tiny pot (I just made a small amount to work things out) that’s the result and she’s going to advise me where I can do better next time…she says it’s harder to make fruit jelly than it is to make jam…I felt so much better after she said that…she also said these things take practice…
