In particular I’d like to wish seasons greetings to my teacher, Miss Jean Brodie, who gave me succour through those awkward teenage years, my barman, Larry, who was always quick with a joke and to light up a smoke, my drug dealer, Nick, he often helped me make it through the night and of course the girls at the parlour, Vickie, Roxanne and Sky, it was always a relief to meet them.

This recipe makes a large amount of dough – which you keep in the fridge (or freezer). It will make 4 1lb loaves. So the amounts are larger, the method is very different and this recipe uses honey instead of sugar and unbleached all purpose flour (what we call plain flour in Oz).

The method involves no kneading or punching down with more rising. If you want to make bread in an easy way this is a good method.

The authors are Jeff Hertzberg and Zoe Francois – worth the money I paid for it.
