I once drank a beer that was brewed with yest from the brewer’s beard. Yogina is a little bit more out there than that.

there are lots of wild yeasts on the surface of fruit. when you do grapes you first use potassium metabisulphate to kill these at the beginning of processing. then you add your specific yeast. now some wineries have a natural yeast living in their building that does the job. but this is usually in really old places where this one is the dominant strain.

i would also imagine that commercial beer yeasts are just as specific to a brews taste as wine yeasts are. and not all would come from watermelons.

More a question of what it tastes like.

Brewing yeast generally break down sugars into alcohol and carbon dioxide, without much in the way of other by-products. These by-products can cause off flavours in the brew. I used to do a fiar bit of home-brewing, it was always stressed in home-brewing the need to sterilise any containers, bottles and utensils that came into contact with the brew, for fear of ruining the flavour. The aim of home brewing was to get a quality product at home that was as good as a bought one.

It’s very easy however to make a liquid that both contains alcohol and tastes bad. Which is probably matches the priorities of prisoners with limited access to equipment.

that is what we used when we had a production line going. the old containers just needed a rinse with hot before the next brew was started. we had 5 fermenters going and around 700 bottles. there were a few of us in the house. and lots of friends.

-ide has no oxygen (eg FeS)
-ite has some oxygen (eg Na2S2O5)
-ate has maximum oxygen (eg CaSO4, FeSO4)
