To get to the other side.
If you mean why do they crack them as soon as they’re removed from the boil, it’s to stop them from cooking any further due to trapped heat.

Actually I do both now that you mention it.

I do both. Put the saucepan under the cold tap and tap each egg on the rim to crack them.

I have a slight variation on this, empty water out of pot, holding the pot handle, throw eggs into the air, they fall back into pot (usually) which cracks the shells, then fill pot with cold water.
Why do people put hard boiled eggs back in the fridge?

Doesn’t happen in chez Tamb. For me eggs have to be so hard they can be weaponised.
Mine become weaponised after I have eaten them!

Projectile weapons are permitted but poison gas is banned.

I use the poison gas application as a deterrent.

Salmon roe is cheaper & local.
S’pose to be strictly scientific should do both. adds stuff to shopping list.

Funny you should mention anchovy paste. Last night on “Open all hours” Granville was trying to flog some dodgy anchovy paste. It could be argued that all anchovy paste is dodgy.

this one. makes it easier to get the shell off too.

Given your liking for the stuff I was too polite to mention that.
An anchovy is a little fish about 3 inches long, and it smells like a finger.

Would young ones be fingerlings?
Yes! and I never made that connection, well done 10/10.

Yes. Tepid hbes are yukky. Hot or cold but never tepid.
Indeed – six eggs in the pot. Eat whatever you want while they are hot, and stick the rest in the fridge for ‘ron.

it makes them easier to peel
especially if you shock the eggs by plunging them into cold water
the egg draws away from the shell to the extent that shell, still
attached to the membrane, peels away in one piece, like taking
off a jacket.
(I used to work in a catering service, and had to boil and peels
dozens of eggs at a time.. picking at tiny shell fragments would
have taken far to long to be productive.)

I pointed this out to the manager/owner and he said to just add the mayonnaise etc to the mushed up eggs and don’t worry about the bits of my skin that had ended up in the mix :/
By the way, I only did this once, after that I developed a technique that did not involve me grating my fingertips into the egg salad. More of a push the eggs through the holes and mush them up by squishing them…oh, and no gloves were worn.
Sorry if you ate some of my skin back then. As a vegetarian I was a bit worried about this.
It’s all good, I’m sure your skin was clean.
Inspired by this thread, today I made hard boiled eggs for brekky. I used Martha Stewart’s recipe and it worked a treat.

Now that I only cook a few at a time
I use the Martha Stewert 13 minutes
sitting in boiled water method too.
It works a treat, don’t it? :)
