I have a slight variation on this, empty water out of pot, holding the pot handle, throw eggs into the air, they fall back into pot (usually) which cracks the shells, then fill pot with cold water.

We recently bought a Sunbeam Poach & Boil machine. Perfectly cooked eggs every time. Poached, boiled or mini omelettes.

Many years ago, before food processors, I worked in a take-away food place in Australia Square (I mention this in case any of you ever ate an egg sandwich from that place around 1977). Every morning we’d boil up a very large pot of eggs for egg salad sandwiches. Then I’d run them under cold water, cool them down by moving the eggs around in the pot (it’s a big pot remember) and finally I’d peel them all. After the peeling (this is more a story of egg mushing rather than egg peeling) I’d ‘grate’ the eggs on a large hole grater. Remember all the water involved in the cooling and peeling part? Yes? Because by then my finger tips were all pruney and wrinkly and soft and stuff and were easily grated off by the grater and the bits of skin ended up in the egg mush. All the skin from the finger tips of the 3 main fingers on my right hand.

I pointed this out to the manager/owner and he said to just add the mayonnaise etc to the mushed up eggs and don’t worry about the bits of my skin that had ended up in the mix :/

By the way, I only did this once, after that I developed a technique that did not involve me grating my fingertips into the egg salad. More of a push the eggs through the holes and mush them up by squishing them…oh, and no gloves were worn.

Sorry if you ate some of my skin back then. As a vegetarian I was a bit worried about this.
