Subject: Coriander

I like it. Some call it cilantro… silly buggers.

But, I’ve got a paddock full of it and it is about to bolt to seed as it does… how do I preserve it? What recipes or things can I do, in order to continue eating it for the months to come?

Open to all suggestions.

Buy yourself a swag of macadamia nuts and make macadamia and coriander pesto, put it in jars and flog it off to the foodies.

I would have suggested walnut because nobody is doing that but I believe you are in WA. Unless of course you know a source in WA.

It will also work with pine nuts but it is rather scrumptious with Macadamia.

Chop and pack into icecube trays with good quality olive oil and freeze. Pesto can be frozen like this as well.

love rocket and other greens, just can’t stand that coriander, however the ground seed in curry is good.

I have many reasons for hating coriander but now I realise it is mainly about bad cooks.

I can’t eat it in salads. In truth I can only just handle it in pesto. In which I’d prefer Basil.

Have to admit though when mixed with all that petrol flavoured stuff they usually mix coriander with, it acts as a cooling agent.

As I mentioned earlier in this discussion. Coriander in a pesto made with macadamia rather than the traditional pine nuts and basil, is a taste delight unexpected.

I could run my car on what is described as mild Indian cuisine.
