Human’s don’t have two eyes to improve depth perception. They have two eyes in case they lose one in a fight or accident.

There are at least ten different ways that we perceive depth cues. Binocular vision is only one of them.

I had a retinal tear recently, that caused a temporary loss of sight in one eye (for about a fortnight). I noticed more difficulty in determining the distance to objects within two metres, but other than that no significant difference.

Seriously though humans have two eyes because they descended from other critters with two eyes, going back at least 520 million years.
