Rose Petal Jam

125 g red rose petals ( about 15 large roses)
1/2 cup lemon juice
1 & 1/2 cups water
2 cups sugar
2 tablespoons commercial pectin such as Jamsetta

Hold roses by the stem with one hand and the head of the rose in the other and pull all the petals off in one action.
Still holding the petals , cut the ‘heel’ or the rough part of the rose , at the base, off with scizzors.

Place petals in a strainer, rinse throughly under cold running water, drain well.

Place petals in a large saucepan, add strained lemon juice, water and sugar. Mixture should not be more than 5 cm deep.
Stir over a low heat without boiling untill sugar is dissolved.
Bring to the boil, reduce heat, cover and simmer gently for 30 minutes.
Blend commercial pectin with a little of the juice from the pan , add pectin mixture to pan, stir without boiling untill dissolved.
Bring again to the boil,reduce heat ,simmer for 1 minute.
Pour into steralised jars and seal when cold.
Store in a cool dark place

5 minutes drive from me – concordia wines make a rose petal wine – and guess what i’m sipping now.
a savoury yet fruity liqueur wine with – ummm sip – pleasant clear water background – and um – full subdued richness blah blah.
