little help here folks
I am looking for tried and tested easy, tasty, cheap recipes that people make for their families.
I am looking online also, but if anyone has something that they make for their families that is satiating and easy to prepare (with minimal time) and relatively cheap with few ingredients, throw them at me.
Things like a bread bake of some description.
Tuna Pasta with corn (I already have that one)
just those great ‘go to’ meals that you love.

I made Katsu chicken the other night

pumpkin soup with chicken pieces.
1/2 queensland blue, butternut too sweet, onion, celery, any other vegies that are wilting. bit of oil in stockpot. slightly brown vegies. add stock or water, not a lot. steam until soft. use stick blender to puree. cook some chicken breast, shred. add to puree. season to taste.

When Sarah was about 11 or so she started cooking that for dinner. Brett hated it. I was so happy that she was contributing.

I make it from scratch.. and freeze, it actually taste better after it’s been frozen… but I can’t count on my participants to freeze meals… they all have to be one offs and it must reach a level of taste and satiation, or they will choose the fast food option..

Cheap as chips and tasty. Tin of smashed tomatos with garlic, chilies, anchovy, salt and pepper, simmer for a bit, add two tins of drained kidney beans, top with sour cream and grated cheese serve with corn chips. Plus kids love it.
And with the same basic recipe also add diced stuffed olives and maybe some fried bacon, at th last minute add a bag of baby spinach leaves, serve with spagetti topped with grated cheese.
In the first recipe the most expensive ingredient is the corn chips, tinned tomatoes and kidney beans come in at 60c each.

Another delicious and tasty one is smoked ham hock, simmer crap out of and add powdered chicken stock and garlic and pepper. Add dried split peas. At some stage fish out the hock, cut away all the stuff, chop up and return to the liquid. Serve with crusty bread. Should be thick.
One note, underestimate the split peas, it’s easy to say, nahh not enough and later you are looking at porridge.

Omelettes are easy peasy.
Some milk and eggs, beat.
Add chopped up cheese, tomatoes any left over meat, anything really, beat.
Pour into hot pan, fold when ready, serve when ready.
Serve with chilled coke poured over half a squeezed fresh orange.

and the easy part is that these often come in ready to pour packets… so no real extra work making creamy bases…

Yes and you can add chicken pieces to virtually any kind of vegetable soup or stew.
Go particularly well in cream of cauliflower, cream of celery.

One that the kiddies names train smash, potatoes cut into slices, lay in layers with onion rings and thick cut rings of really ripe tomato, sprinkle yep, garlic and chili on each layer, some salt and pepper, add cream and oven, toward the end add grated cheese to the top.
Maybe not as kid friendly is lambs fry which is still cheap, bacon and onion, fry bacon first, add onion rings, wait a bit, then add floured kidney slices, fry a bit, add the two usual suspects, a bit of sour cream and serve.
As an aside I season a lot of things with fish sauce, smells disgusting, works like salt but savoury.

I usually just use roma. less pulp, and the ones for making your own bol sauce.

And the last one, another favourite, get a bulk pack of chicken wings, they are also cheap. You put them in a big icecream container and add curry powder or paste, fish sauce, garlic and chili, shake it about a bit then leave it overnight in the fridge, arrange on a pan and oven. Big favourite with kids and a big enough pile filling as well as cheap.
Score extra points if you get the discounted chicken wings with a day left.

A quick and easy Germanic pork dish I do quite regularly: pan-fry a pork chop, cutlet or steak in a little butter until nicely done, then remove from pan and in the remaining fat add a small chopped onion and a couple cloves chopped garlic, brown a little, then add several heaped tablespoons of sauerkraut (tinned or vacuum-packed) plus a light sprinkle of caraway seeds. You can also add a little splash of apple cider if you like. Cook until well heated through, then push the sauerkraut to the side of the pan and put the chop back in to reheat.
While all this is going on, boil a few spuds. Serve pork, sauerkraut mix & taters with a knob of butter, white pepper + mustard of your choice.

Yeah pork is cheap and the roasts are usually big, you need to cook it for one meal, then wack it back into the oven to cook a bit more..
Don’t forget it as you relax and enjoy a post repast balloon of brandy in your favourite leather chair in front of a roaring fire with a platter of selected cheeses.
Easily enough done.

I see where you were coming from now. How about a faux you could call it a maxdonalds fixh burger, I do this one as well, you do it on the first day of buying the soft white bread (I don’t go through a whole load quickly so I freeze it after a few days) anyhoo, a bulk pack of frozen fish fingers, there are 40 in a box and they are cheap, fry up four, arrange on margarined aforementioned soft white bread, smear on some jar tartare sauce.
Goes well with the munchies.

Hot potato salad.
New potatoes boiled. Add finely diced onion,capsicum, celery, parsley, fresh dill or seed. Fried bacon or ham steak pieces. Dress with sour cream and some seeded mustard. Serve with chunky bread.
Spag carbonara.
put on spag. Fry bacon pieces. Take away all but a couple of teaspoons of fat. in a bowl mix cream, an egg, and parmesan. Combine all. (extra egg yolk if you like eggy. I don’t. I cook it till the egg looks dead. This isn’t the traditional.)
Oven baked potatoes.
Bake in the jacket. Vary toppings. Ham/bacon/salami/smoked salmon/smoked chicken. Fried onions/chopped shallots/green onions. Coleslaw. Cheese. Sour cream.
Stir fried Beef strips and onions.
Mix beef strips in cornflour and egg white. It turns into a gluggy consistency. Heat wok or pan and cook some at a time..placing them on newspaper/kitchen paper as they brown. Throw in quartered and split onions..(and tinned baby corn/ capsicum slices/bok choy etc) Put the beef back in. Sprinkle pan with a little sugar and keep on stir frying. Add sherry and soy sauce. Serve on boiled rice.

I had to get home to find the quantities for this. I generally just make it up…
Quick chick ‘n’ spaghetti
You will need:
250g spirelli (you can use any pasta, but I reckon spirelli works best for this)
A Continental cream of chicken soup pack
half a cooked chook, boned and broken into bits.
chopped green capsicum
some almonds
Cooke the spirelli. Drain. Make up the cream of chicken soup with 1 cup water and 1 cup milk. (Cold) Put the spaghetti, the chook, the chopped green capsicum, the almonds and the soup into a casserole and mix it up.
Cook at 190C for 15-20 minutes.
Quite nice with a topping of soft breadcrumbs too. You can also mix in some grated cheese into the breadcrumbs.

00 hard durum wheat flour
eggs
ratio of 1 egg for every 100gram of flour
Mix them together in a bowl or on a bench until combined. Then kneed it (stretch it) until the texture changes to smooth. It will take about 5 minutes. Wrap it in glad wrap so it doesn’t dry out and wait about 30 minutes or until the dough doesn’t spring back fast when you push a finger in it.
Roll it out evenly until it is thin enough to see your hand through it and you are good to go.
It takes 2 minutes in salted boiling water.
Eat it vegies. Or make ravioli from it and use a basic filling.

Spiced chicken with lentils
Cook 1/2 cup dried red lentils in boiling water for 30 minutes. Drain well. Heat a splash of vegetable oil in a saucepan over high heat. Add 1 chopped onion, a chopped clove of garlic and 2 tsp grated ginger and cook for 3-4 minutes. Add 4 skinless chicken thighs (quartered) and stir-fry for 2 minutes. Add lentils and 2 cups water and simmer for 20 minutes, until thickened. Stir through 2 Tbsp butter and a handful of chopped coriander until butter is melted. Serve with basmati rice and warm naan bread

Put water in saucepan, add lentils. Turn hotplate to low, allow to simmer. Add stock cube anytime you so desire. Add extra garlic, chilli, anything else you think that may enhance this delicious flavour or indeed garnish with parsley and chives.
You can of course spread it on buttered bread with added vegemite if so prefer.

If you can make a passable Ragu sauce, you can add a little ‘mexican spice’ to it and serve with half a dozen options like rice, tomatoes, red onion, capsicum, corn kernels, sour cream, chilies, baby spinach leaves, grated tasty cheese, Chorizo sausage… Served with warmed Tortillas. I have fed armies on this kind of stuff. Only requires one burner, one cast iron pan, and twenty minutes with a sharp knife to prepare.

Bring to the boil. Beat in a beaten egg. Add one of those dicky little tins of creamed corn and the two minute noodles.

One of my quick and easy go to recipes :)
500g chicken thighs sliced
2 tble balsamic vinegar
1 tble brown sugar
2 cloves of garlic
1 tble olive oil
250g cherry tomatoes
100g spinach leaves
1/2 cup basil leaves
Best to use a glass or ceramic dish to marinate the chicken pieces.
Whisk vinegar, sugar and garlic in a small bowl, pour over chicken, add salt and pepper. Turn chicken to coat. Cover and refrigerate for 30 minutes or you can use it straight away. I like to marinate during the day while at work.. up to you.
Cook the chicken using the oil in a deep pan, once cooked remove from the pan.
Add cherry tomatoes to pan, stirring occasionally until tomatoes start to soften. Return chicken to pan. Add spinach. Cook for 1 to 2 minutes or until spinach is just wilted. Top with basil leaves.
Serve.

Brown a chopped onion in butter in a pan, add a couple of crushed cloves of garlic and a chopped big red chili, cook on low heat in the butter for a bit. Add some salt and two tablespoons of mustard powder. Sometimes I might put some pepper in there, or cayenne, whatever. Add 3 finely sliced chorizos, let that cook until the base has been imbued with its juices. Add a tub of tomato paste (140 ml), mix in the pan. If you’ve got chopped olives you can add them. Add cooked pasta, mix.
One day I didn’t have any pasta so I used ramen: the results were a big hit here, surprisingly. Let the ramen cook in the sauce, don’t precook it!

Brown a chopped onion in butter in a pan, add a couple of crushed cloves of garlic and a chopped big red chili, cook on low heat in the butter for a bit. (Probably fair to say that most of my non-dessert cooking starts like that). Add some salt, black pepper, a tablespoon of turmeric, a teaspoon of cayenne, a tablespoon of white sugar, let that go for a while on low heat. Then put in a finely chopped apple or pear, let that go for a bit. Add eight pieces of chicken, coat them with the sauce.
Let it cook for 90 mins on medium heat, turning and so forth occasionally. It’s not quick if you include cooking time but prep time is brief.
I’m assuming y’all know how to cook so I don’t need to say “stirring” or tell you when onions are browned or what an appropriate temperature for cooking chicken is or how to know if it is properly cooked.
