Subject: Baked rice pudding with rhubarb

120g med grain rice
300ml evaporated milk
700ml full cream milk
2 tabsp sugar
Zest of 1 blood orange (or Navel)
pinch cinnamon
35g butter

Place rice in deep baking dish. Add sugar, zest and cinnamon to the mixed milks and pour on to rice. Dot with butter.
Bake in oven at 150deg C for about 1 1/2 -2 hrs.
Will eventually have a gold crust. **************************

Baked Rhubarb

1 1/2 bunches rhubarb trimmed (620g)
1/2 cup caster sugar
1/3 cup orange juice
45g butter
zest of orange.

Cut rhubarb stems to 6mm lengths and place on a baking tray lined with baking paper.
Sprinkle with orange juice and a little caster sugar, zest, and dot with butter,
Bake for about 1/2 hour at 160 deg C. The stems should be tender and a deep red colour.

My rice is in the oven. Rhubarb on the tray. Measurements up the creek but who cares LOL

Verdict;
I f I had used less rhubarb or more sugar it would have been better, We poured honey on it and it was yum.
If I had used less rice or more milk it would have been less stodgy. Easy fixed. The orange came through nicely :)
So the moral of this story is- follow the recipe Val!!
