I have about 10 Butternut Pumpkins growing, can these be picked at any time or do you have to wait until the vine dies off?

I’d wait until the vines die back. Put some straw under the fruit to stop the moisture seaping into the fruits. Can harvest as you want one though.

Leave a good couple of inches on the stem too.

you can pick and eat at any time.
to store the pumpkins the stem connection must go brown and then after picking the pumpkin should be left to harden in the sun for 2-3 days

You can pick your butternut pupkin after the thin green lines start fading. You know the green lines that run up to the stem on the pumpkin itself.
